![]() It's cooked slowly at a low temperature in the oven, so it retains more of it's juices, and then you get a great crust on it when seared quickly on a high heat. Reverse searing is a really easy method to ensure that you don't overcook your meat. Honey and mustard would work great, or add in some herbs. I love the apple and maple marinade for these reverse seared pork chops, but you can use any favorite marinade you like.
